Developing menus with GHG indications is one of the actions provided for by the ECORUTOUR Project, “Environmentally Compatible Rural Tourism”, which aims at increasing consumer awareness on the need to reduce Greenhouse Gas Emissions, acting on a tourist services level in protected areas where respecting and protecting the environment has greater importance. Atmospheric Greenhouse Gases (GHG) absorb infrared radiation and cause the greenhouse effect. They can be both natural and anthropogenic. Primary greenhouse gases are represented by water vapour, carbon dioxide, methane, and nitrous oxide. Some human activities increase the level of these gases releasing into the air other exclusively anthropogenic greenhouse gases. Life Cycle Assessment (LCA) is an objective technique for evaluating and quantifying the energetic and environmental loads and the associated potential impacts that a product/process/activity has during its whole lifetime, from the purchasing of raw materials to the end of life disposal. The LCA method considers all of the life phases to be interrelated, parting from the assumption that each phase originates the next.
